Sélection du Sommelier H I D D E N B E N C H ‘ F U M É B L A N C ’ 2021 B E A M S V I L L E B E N C H , O N TA R I O, C A N A DA $90 This 100% Sauvignon Blanc is barrel fermented and oak aged in a Pouilly-Fumé style beginning with classic aromatics of meadow, pink grapefruit, flint, hazelnut and white peach. On the palate, the wine is zesty and bright but balanced by flavours of barrel spice, tarragon, mandarin orange and dried apricot. A fantastic pairing with a variety of fresh seafood and pan seared white fish (like Halibut). C H ÂT E AU C A M I N O S A LVA 2016 H AU T - M É D O C , B O R D E AU X , F R A N C E $75 A spicy wine with notes of tobacco, black cherries and sweet dark fruits. It is medium-plus bodied with a slightly grainy texture, bold flavours and a grippy finish. The 2016 vintage is a blend of 56% Cabernet Sauvignon, 39% Merlot, and 5% Petit Verdot from the southern end of the appellation. Half was matured in barrel for nine months, the remainder in stainless-steel tank to preserve freshness and balance. 2016 is widely considered one of the best vintages in Bordeaux over the last 30 years and will likely rank with the best of all time.
