CIDRE Eric Bordelet has around 23 hectares of apple and pear orchards which are farmed organically. The farm is in southern Normandy, located on the upper Briovian schist ‘Grand Cru’ sedimen- tary rock. How to Make a Proper Martini: 1. Start with a splash of vermouth. Roll the vermouth in a mixing glass to form a coating, then dump it out. 2. Now add ice to the mixing glass. Don't skimp! Ice is necessary to chill and blend the other ingredients. 3. Place 3 generous ounces of gin or vodka in the mixing glass. 4. vins libres Buvette carefully curates ‘vins vivants’ Le ‘vin naturel’, natural wine, is farmed organically (biody- namically) and crafted without adding or removing anything in the cellar. No additives or processing aids are used, and ‘inter- vention’ in the naturally occurring fermentation process is kept to a minimum. The result is a living wine, a free wine or ‘vin libre’. Vins Rosés Rosé wine is a sort of wine made from red wine grapes, crafted in a similar manner to red wine, but with reduced time fermenting along with grape skins. BURGUNDY It was out of respect for the rich history of the terroir that Château De Béru decided to convert to organic and biodynamic winemaking. BEAUJOLAIS Wine has been made in this region for over 2,000 years, ever since the ancient Greeks founded the city of Marseille in 600 BC. The Domaine Jules Desjourneys is located in La-Chapelle-de-Guinchay and is manually cultivated in accordance with biodynamics principles. RHÔNE The Rhône is known for its warm, rich and juicy reds. In the North, with its cooler climate and mistral winds, Syrah is the only grape grown. LANGUEDOC Languedoc is one of the most extensive areas of french vineyards. SUD OUEST The South West (or “Sud-Ouest” as the French call it) might be the least known region in France, filled with hidden treasures and breath-taking scenery. PROVENCE-CORSE Provence is one of the oldest wine growing regions in the world, established in 600 BC when ancient Greeks first planted Syrah grapes outside of Marseille. BUVETTE TOKYO In the era of Tokugawa shogunate the area surrounding Edo castle was developed and landfilled and the fishing village became an urban area. After the end of the Meiji Restoration Hibiya, the city of Tokyo had become a modern city. In the 1930s, the first Japanese electric traffic light appeared at a Hibiya crossing point. BUVETTE PARIS Situated on the Right Bank between ninth and eighteenth arrondissements, Pigalle is celebrated for its infamous cabarets like the Moulin Rouge. The neighborhood is named after a renowned sculpture from the 1800's and has continued to be frequented by artists. You can find our Buvette in Pigalle steps away from the cabarets and the markets on Rue des Martyrs. GRIN’WICH VILLAGE Greenwich Village was called Sapokanikan by Native Americans who used the area primarily for fishing. During the 1630s, Dutch settlers called this area Noortwyck and began to farm the land. It remained sparsely populated until the English conquered it in 1664.
